Frittata- Why Nadda?

One breakfast recipe from the MBM Meal Manual with which I am particularly obsessed is the Turkey Bacon Veggie Frittatas. Not only are they super duper tasty, they are also incredibly quick, easy, nutrient-dense, filling, inexpensive…need I say more? Let me explain how I can confidently make all of these claims:

1.      Tasty: For those of you who are tryinggg to like eggs, this is a great way to take the plunge. The bacon + veggies + cheese in the frittatas help distract from that “egg-y” quality for which some must acquire a taste over time.

2.      Quick: Perfect for time-crunched individuals, these frittatas can be prepared in advance and stored in the refrigerator for up to three days. This saves you the time of scrambling fresh eggs each morning, as you can simply grab a couple on your way out the door (even eat them in your car on the way to work if you must).

3.      Easy: The recipe is quite simple, as is true of all my recipes because I do. Not. Like. To. Cook. 😊

4.      Nutrient-dense: The FDA recommends that we consume 5-9 servings of fruits and veggies every day. This mark is tough to reach if we don’t consume a serving each of veggies and/or fruit at breakfast. Since it would be kind of strange to have a stand-alone serving of veggies in the morning, your best bet for sneaking them in is through these frittatas (or an omelet).

5.      Filling: The inclusion of veggies, which are high in fiber, will keep you fuller than will eggs by themselves. The addition of turkey bacon and cheese complements the eggs and milk to give you a high protein breakfast that will last you at least until your mid-morning snack (…or maybe lunch for those of you who haven’t joined in on the MBM meal schedule just yet).

6.      Inexpensive: The final beauty of frittatas is that you can choose to include anyyy veggies you like! This freedom allows you to opt for seasonal veggies, which are usually lower in cost, or whatever veggies happen to be on sale at the grocery store that week. Y’all know I’m all about #ballinonabudget and this meal certainly allows for that to happen.
