Taco-Time Peppers

Ingredients:

- 4 bell peppers, sliced in half length-wise and de-seeded

- 1 lb taco-flavored ground turkey or chicken, browned

- 1 (15-oz) can low-sodium black beans, drained and rinsed

- 16 oz salsa

- 1 cup frozen corn

- 2 cups shredded Mexican cheese, divided

-  8.5 oz brown rice, cooked

- Greek yogurt, plain (used as substitute for sour cream)

- Optional toppings: diced tomatoes, cilantro, pickled jalapenos (for serving)
