Coconut Crispy Energy Bites

Ingredients:

- 1 cup natural nut butter (almond, cashew or peanut)

- 3 Tbsp unsweetened vanilla almond milk

- 3 cups crispy rice cereal

- ½ cup coconut, shredded

- ½ cup protein powder

- 2 Tbsp dark chocolate cocoa nibs

Directions:

1. Mix nut butter and almond milk in large, microwave-safe bowl. Heat in microwave for 30 seconds, mixing half-way through. Mixture should be easy to stir, and ingredients should blend together.

2. Add remaining ingredients to bowl, and stir. Using your hands, form mixture into golf-sized balls.

3. Place balls in an airtight container. Store in fridge or freezer.

*Tip from the expert : I store mine in the freezer and take two out at a time when packing lunch.
