Hamburger Helper - Quinoa Edition

Yield: 6 servings

Ingredients:

- 1 lb 93% lean ground turkey

- 1 Tbsp seasoning salt

- 1 cup yellow onion, diced

- 1, 14.5 oz can diced tomatoes, low-sodium

- 1½ cup spicy V8 vegetable juice, low-sodium

- 1½ cup chicken broth, low-sodium

- 2 cups quinoa, uncooked

- 1 cup Mexican shredded cheese blend, reduced-fat

Directions:

1. Cook meat, onion and seasoning salt in a deep skillet over medium-high heat for 5-6 minutes (until meat is browned). Remove meat mixture from pan.

2. Add broth, juice and quinoa to pan. Cook covered for 20 minutes, stirring occasionally.

3. Add meat mixture and tomatoes to quinoa, then cook covered for an additional 10-15 minutes.

4. Top with cheese, then cook covered for 3-5 minutes (until cheese is melted). Serve immediately.
