Baked Pumpkin Oats

Baked Pumpkin Oats

Yield: 4 servings

Ingredients:

- 1 cup unsweetened almond milk

- 1 egg

- 1 scoop vanilla or unflavored protein powder

- 1 cup old-fashioned oats

- ¾ cup pumpkin puree

- ½ tsp baking powder

- 2 tsp cinnamon

- 1 tsp pumpkin pie spice

- 2 tsp vanilla

- 1 Tbsp vanilla bean ghee

- 1 Tbsp natural nut butter (almond, cashew or peanut)

- 2 Tbsp dark chocolate chips, separated

Directions:

1. Preheat oven to 350°F.

2. Mix all ingredients together (only mixing in 1 Tbsp chocolate chips; sprinkle other Tbsp on top).

3. Pour oat mix onto greased skillet. Bake 20-25 minutes, or until top is set.
