Curried Salmon Patties

Ingredients:

- 1 stalk celery, finely diced

- ½ cup onion, finely diced

- 1 tsp olive oil

- 1, 14 ½-oz can of salmon, drained and flaked

- 2 Tbsp curry powder

- 1 egg, lightly beaten

- 3 Tbsp lemon or lime juice

- ½ tsp pepper

- 1/3 cup old-fashioned oats (ground in blender or food processor)

Directions:

1. Preheat oven to 375°F. Line baking sheet with parchment paper.

2. Quickly sauté chopped celery and onions with small amount of olive oil, until soft/almost translucent.

3. Combine all ingredients in medium bowl; mix thoroughly. Shape mixture into patties- ~1” thick x 2 ½“ wide. Place patties on baking sheet and bake 12-15 minutes (until mildly brown on top).

**Note: Patties can also be sautéed and browned in a skillet, 3-4 minutes each side, or grilled.
