Spaghetti Squash w/ Ground Turkey Meat Sauce

Yield: 4 servings

Ingredients:

- 1 spaghetti squash, halved lengthwise and seeded

- 2 Tbsp extra-virgin olive oil

- 1 yellow onion, chopped

- 1 clove garlic, minced

- 1 ½ cups tomato, chopped

- ¾ cup feta cheese, crumbled

- 1 lb ground turkey, 93% lean

Directions:

1. Preheat oven to 400°F. Pierce spaghetti squash with fork or paring knife, then heat in microwave for 3 – 5 minutes (so that it is soft enough to slice in half).

2. Cut squash in half, lengthwise. Remove and discard seeds and “stringy” insides (like that of a pumpkin). Drizzle each half with olive oil, pepper, and a dash of salt.

3. Place squash halves face-down on baking tray. Bake for 30-45 minutes at 400°F.

4. While squash is baking, prepare meat sauce. Brown ground turkey, sauté onions and mushrooms (optional), then heat all ingredients together in spaghetti sauce on stove top.

5. When squash is ready, remove from oven and use fork to scrape “spaghetti” out of squash.

6. Top with meat sauce, and enjoy!

**Tips: When preparing the sauce, feel free to add in any other veggies you like- diced bell peppers, mushrooms, olives, basil, etc.
