Pumpkin Spice, Twice as Nice
Not only is pumpkin the magic ingredient for making everything taste 10x better than usual, it also presents some wonderful health benefits. For starters, pumpkin is known to help the body fight inflammation. Perfect timing with a tough flu season upon us. Pumpkin is also a great way to add some fiber and potassium to your diet so that you donβt fall behind on your micronutrition this holiday season.
The important thing to monitor when it comes to seasonal pumpkin products is sugar content. While pumpkin in and of itself is a nutritious food, it often gets blended with numerous baking ingredients that are less this way. Roasted seeds are a great way to harness the protein content of pumpkin, while also embracing their magnesium content. When scrolling through pumpkin-enthused baked good recipes, focus on those with natural sugar sources (i.e., maple syrup, banana, etc.) and nutrient-dense ingredients (i.e., eggs, egg whites, protein powder, etc.).
The link below is to a yummy recipe for Pumpkin Protein Muffins introduced to me by one of my most kitchen-savvy clients. Gave them a try myself and I highly recommend. π Feel free to add a dallop of Cool Whip on top!
